You Wanted My Soup du Jour!

First– Thank you for all the Valentine’s Day LOVE!!
I hope you guys keep that lovey dovey feeling all year round!
I was also asked ,”how do you make that spinach soup that made you so strong and your guns look like Popeye?!” OK, no one actually said I have huge guns like Popeye it was more like, “Do you have that recipe for your spinach soup?”

Why, yes, yes I do!

Cream of Spinach Soup

Serves 6-8

Ingredients:
1 large onion, peeled and chopped
5 large plump garlic cloves, peeled and chopped
2 medium potatoes, peeled and diced
750 ml (or 1 1/4 pints) of cold water
1 tsp salt

1 lb of spinach, washed and large stems removed
2 oz margarine
3 tbsp flour
750 ml (1 1/4 pints) of milk
1/2 tsp of freshly grated nutmeg
freshly ground black pepper
6-8 tbsp of creme fraiche or sour cream
warm foccacia bread, to serve

Place the onion, garlic and potatoes in a large saucepan and cover with cold water. Add half the salt and bring to the boil. Cover and simmer for 15-20 minutes, or until the potatoes are tender. Remove from the heat and add the spinach. Cover and set aside for 10 minutes.


Slowly melt the margarine in another saucepan, add the flour and cook over a low heat for about 2 minutes. Remove the saucepan from the heat and add the milk, a little at a time, stirring continuously. Return to the heat and cook, stirring continuously, for about 5-8 minutes, or until the sauce is smooth and slightly thickened. Add the freshly grated nutmeg, or to taste.


Blend the cooled potatoes and spinach mixture in a food processor or blender to a smooth puree, then return to the saucepan and gradually stir in the white sauce. Season to taste with salt and pepper and gently reheat, taking care not to allow the soup to boil. Ladle into soup bowls and top with spoonfuls of creme fraiche or soured cream.


Serve immediately with warm foccacia bread.

As for those splotches you’ve been asking about– here is how I noticed them: I am constantly noticing anything that appears in my skin because of my history with skin cancer. But these splotches were pretty big and I just noticed them when I was leaving the locker room to go have a steamy date with my t-mill. So, like any crazy person would, I took a picture of them so that I could keep my eye out on them.

I haven’t seen those splotches come back yet so, I’m hoping it was just a one time crazy thing. I’m not worried about it yet– I’m just keeping an eye on it.

Last nights workout- BOOT CAMP! And I found that I am attractive when doing a platypus walk. You’re right- I’m not. One day? Maybe, even?

There are so many things that I LOVE. And as much as some people hate Valentine’s Day, I love it. Sure some people might call it a “Hallmark Holiday” but some people really need the reminder that they should  love more on a day to day basis.

I went for a short run and I noticed that I’m starting to get blotches on my chest. The only thing I have changed in my diet is taking Vitamin D pills. And I reaaaaally hope that my little pills of sunshine aren’t giving me a reaction. Luckily peanut butter cups never let me down! Nom, nom, nom! And there’s always nutrients in the form of homemade soup. Delish!

Just promise yourself one thing…

Lately I have noticed that a lot of status updates (on bbm, facebook, and/or twitter) have been changing to famous quotes on life and love. Today’s include:

“Just promise yourself one thing… LIVE!”
-and-
“The greatest thing you will ever learn is just to love and be loved in return.”



Inspiration is something that isn’t talked about very often but everyone needs it. Running my first half marathon was something that I have always wanted to do but I just never had the drive to do it until last year. Reading inspiration stories and quotes helps to put your mind into perspective of what your goal really is and what it means to you.
Live. Following through with my goal of completing a half marathon has showed me that running 21K wasn’t as hard as I thought it would be. Of course I had days of struggle but that’s what happens in life. I gained a huge self of accomplishment and self-confidence after crossing the finish line and I knew that I could do anything I put my mind to.


The hard part of living while loving is caring for others. In my mind in order to be able to ensure that you can live, you have to make healthy choices. The biggest thing I see everyday is smokers. I never want to tell someone how to live their life and if smoking is something that they want to do then I can’t stop them. And I don’t want to put up a fight with them. What’s the point? Everyone knows the consequences of smoking and everyone is free to make their own choices. What really hurts is when you see someone you love endangering themselves and knowing that you have a friend who has just battled cancer. So, instead of putting up a fight I will post 2 videos that are stronger than reading words. As an artist, I believe that seeing a performance is one of the most powerful ways to get your point across to your audience. I introduce to you my friend, Marc Kimelman:

“I Move Forward” raised over $35,000 for artists touched by cancer. This inspiration story is one that touches my heart and I hope it has touched yours as well. Marc is now a cancer survivor and continues to perform and choreograph just like he was born to do.
